Chef Owner Cole Hinueber has been working in high end hospitality for over 25 years.  His experiences have taken him from his home in Northern Wisconsin to the East Coast, Australia, France, and Switzerland.

Beginning in his hometown of Wausau, Wisconsin at age 14 Cole started from the bottom at the legendary Back When Cafe.  After earning his stripes there as a busboy, dish washer and line cook he then headed to Melbourne Australia to continue to hone his skills.

Working in the iconic Italian district surrounding the iconic Lygon st, Hinueber worked for 2 years with some of Australia's top chefs.  From there he headed back to Wisconsin, this time in Madison.

In Madison Chef Hinueber worked in Japanese, New Latino and Scandinavian restaurants with James Beard nominated chefs.

In his next move Hinueber moved to Nice in the heart of the French Riviera on a mission to learn french pastries.  Working in four different Michelin star restaurants, emblematic bakeries and 5 star hotels, he gained a wealth of skills.

After nearly ten years in France and Monaco Chef Cole brought his talents to Maui after being heavily recruited by the Four Seasons and Wolgang Puck's Spago Maui.

Kitoko Maui boldly opened in July 2020. In times of no tourism, Kitoko instantly provided something fresh and new for the Maui food scene.

Originally located at Azeka in Kihei, Kitoko also had a stint at Wailea Village before settling into the idyllic South Maui Gardens in 2022.

At this moment Kitoko took over the Blue Door Bakery. This sourdough bakery is located next to Kitoko and is open 7 days a week and offers a top notch brunch, fine french tartes and petit gateaux as well as sourdough pizza and sandwiches.

Having survived the Covid economic turmoil and the drop in tourism following the Maui wildfires, Kitoko and Chef Hinueber have gotten stronger through it all.
